Chefs' Profiles

The Dorchester is now one of the most exciting places to dine in London from our award-winning afternoon tea to authentic Cantonese cooking to contemporary French cuisine.  The restaurants are overseen by a group of talented Head Chefs who include Henry Brosi (the Executive Chef of The Dorchester), Brian Hughson (Head Chef of The Grill) and Jocelyn Herland (Executive Chef of Alain Ducasse at The Dorchester).  Over 100 full time chefs support these Head Chefs, each with their own skills, dedication and passion.
