Brian Hughson, the new Head Chef of The Grill at The Dorchester joined the iconic London hotel after making his name as the opening Head Chef at Rhodes W1, Gary Rhodes’ London restaurant, which was awarded a Michelin star and three AA rosettes within seven months of its debut.  He has cooked for HRH Prince of Wales and eminent London restaurants including Pétrus, Rhodes in the Square, Frith Street, 30 St Mary Axe (The Gherkin), the Savoy Grill with Marcus Wareing, and Mirabelle, Belvedere and Wheelers with Marco Pierre White. Hughson cooks with an assured light and clean style focused around the key ingredient of a dish.  His new menu is a feast of modern British cuisine alongside timeless grill classics with clean presentation using quality ingredients sourced from the British Isles such as beef, lamb, salmon and garden vegetables.  Alongside the new menu, Brian has reinstated classics from the original Grill menu – ‘Dish of the Day,’ for instance – and the traditional salmon carving trolley introduced when The Grill first opened in 1931. Born in Speke, Liverpool, Hughson studied the culinary arts at City of Guilds, Caulden College, Stoke on Trent.
